ALL SAUCES and desserts are homemade (except for the ice cream).

DURUM WHEAT ”Triticum Durum” contains a high content of gluten proteins.
FISH Our fish supplier is certified according to MSC, ASC and KIWA.
ARBORIO RICE Italian round grain rice. The rice type is named after the city of ARBORIO. Once the rice is cooked, the grains are firm, creamy and chewy.
RICOTTA is an Italian cream cheese. Initially, ricotta was exclusively a sheep’s cheese, but today is also made from cow’s milk.
PARMESAN Parmigiano-Reggiano is a classic Italian hard cheese made from cow’s milk, which got its name from the fact that the cheese first began to be made in the area between Parma and Reggio Emilia in Emilia-Romagna in northern Italy.
PECORINO is aged sheep’s cheese that originates from Italy. Pecorino means sheep’s cheese and it is made in several regions of Italy. The cheese is available both as fresh, intermediately aged and well-aged and this means that the skin varies in color and taste.
BALSAMIC VINEGAR Aceto balsamic is made from the concocted grape must from the Trebbiano grape that grows around Modena and Reggio Emilia in northern Italy.
